Easy Side Dish Recipes: Tomato Basil Salad

My veggies are coming in and here is a very quick side dish idea-- fresh Tomato and Basil Salad.

Here's what you need:

  • Several fresh tomatoes
  • Several fresh basil leaves
  • Dash of salt
  • Dash of pepper
  • 1-2 tablespoons of pure virgin olive oil

Here's what to do:

  • Dice tomatoes
  • Chop basil
  • Mix with salt, pepper, and olive oil
  • Chill and serve

Prep time is about two minutes.

Variations can include adding:
Fresh Mozzarella cheese
Dash of Balsamic vinegar
Chopped onion
