Easy Side Dish Recipes: Homemade Potato Salad





Summer means picnics and BBQs and that means it's time for potato salad. 
Prep time is about 10 minutes.

Here's what  you need:

  • 3-5 lbs. of potatoes
  • 1/2 - 1 1/2 cups of mayonnaise
  • 1/4 cup of vinegar
  • 2-3 stalks of celery, sliced
  • 1 onion, chopped fine
  • 1 tablespoon of salt
  • 1 tablespoon of pepper
  • 1 tablespoon of paprika

Here's what to do:

  • Cube the potatoes
  • Boil the potatoes for 20-30 minutes
  • Drain the potatoes
  • Add and mix the ingredients into a large bowl
  • Add potatoes and stir
  • Top with sprinkled paprika

Refrigerate until ready to serve.

A variation is to add a chopped up hard boiled egg or two . . . (How to Make Your Own: Hard Boiled Eggs and Egg Salad).

I like to make potato salad the night before so the flavors have a chance to sweep into the potatoes.
