Easy Side Dish Recipes: Homemade Potato Salad
Summer means picnics and BBQs and that means it's time for potato salad. Prep time is about 10 minutes.
Here's what you need:
- 3-5 lbs. of potatoes
- 1/2 - 1 1/2 cups of mayonnaise
- 1/4 cup of vinegar
- 2-3 stalks of celery, sliced
- 1 onion, chopped fine
- 1 tablespoon of salt
- 1 tablespoon of pepper
- 1 tablespoon of paprika
Here's what to do:
- Cube the potatoes
- Boil the potatoes for 20-30 minutes
- Drain the potatoes
- Add and mix the ingredients into a large bowl
- Add potatoes and stir
- Top with sprinkled paprika
Refrigerate until ready to serve.

I like to make potato salad the night before so the flavors have a chance to sweep into the potatoes.
