Wild Game Recipes: Creole Catfish

Another wild game recipe, Creole Catfish. Prep time is about 10 minutes.
Here's what you need:
- 1-2 pounds catfish fillets
- 2 cups buttermilk
- 2 teaspoons Cajun seasoning
- 2 cups cornflake crumbs
Here's what to do:
- Marinade the catfish in a mix of buttermilk and Cajun seasoning
- Coat fillets with cornflake crumbs
- Preheat oven to 325 degrees
- Bake fillets on a baking sheet lightly coated with Pam for 15-20 minutes
Creole Tartar sauce:
- 2 cups mayonnaise
- 1 tablespoon relish
- 1/2 teaspoon of fresh ground pepper
- 1 teaspoon Cajun seasoning
- 1 dash of Tabasco
- 1 teaspoon lemon juice
- Mix and chill
