Wild Game Recipes: Cajun Blackened Catfish





Like spicy food and fish? The next time you catch catfish try Cajun Blackened Catfish (Prep time is about 10 minutes).

Here is what you need:

  • 4-8 catfish fillets
  • 2-3 tablespoons peanut oil, for frying
  • 2 dashes of worchestershire sauce
  • 1-2 dashes of Tabasco sauce (optional)
  • 1 tablespoon garlic salt
  • 1 tablespoon salt
  • 1 tablespoon freshly ground black pepper
  • 1 tablespoon cayenne pepper
  • 1 tablespoon onion powder
  • 1 tablespoon thyme
  • Cajun Remoulade, recipe below


Here's what to do:

  • In an iron skillet preheat peanut oil
  • Mix dry ingredients
  • Coat catfish with the seasoning mix
  • Fry fillets in skillet for 3-4 minutes per side
  • Serve with Cajun Remoulade


Cajun Remoulade:

  • 1/2-3/4 cup mayonnaise
  • 1-2 tablespoons chopped Gherkin pickles
  • 1-2 teaspoons capers
  • 1 teaspoon chopped parsley
  • 1 dash of cayenne pepper
  • 1 dash of Tabasco
  • 1 dash of worchestershire sauce
  • 1 dash of garlic salt
  • 2-3 dashes of salt
  • 1-2 dashes of black pepper
  • Mix and chill
