Slow Cooker Recipes: Crock Pot Chicken Coq Au Vin





Here is a simple "set it and forget it" slow cooker recipe-- Chicken Coq Au Vin.  Prep time is about 10-15 minutes.

Here is what you need:

  • 1-2 lbs of chicken, cubed
  • 3 slices bacon, chopped
  • 1 lb mushrooms, sliced
  • 3 cloves garlic, crushed
  • 1 medium onion, chopped
  • 2 potatoes, cubed
  • 2 carrots, sliced
  • 1 celery stalk, sliced
  • 1 can chicken broth
  • 2 cups red wine
  • 3 tablespoons extra virgin olive oil
  • 1/3 cup all purpose flour
  • 1 tablespoon parsley
  • 1 bay leaf
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Here is what to do:

  • Very lightly brown chicken and bacon in a pan with olive oil and garlic and onions (Remember you will slow cook)
  • Mix other ingredients
  • Place all into slow cooker and set to low for the next 6-8 hours
