There is a way to open bottles of seltzer water that will save the water and avoid a mess.  Here is the secret:

• Quarter twist open and quick twist closed
• Another quarter twist open and quick twist closed
• Half twist open and quick twist closed
• Another half twist open and quick twist closed
• Full twist and half twist closed
• Open

Effectively you are releasing the pressure in a controlled fashion.
