Wild Game Recipes: Fish Chowder





I love soup and I love fish.
Here is a nice recipe to make a basic fish chowder with your catch. Prep time is about ten minutes and cook time is about 20-30 minutes more.

Here is what you need:

  • 2/3 - 1 pound fresh fish (a variety of fish is best), cubed (about 1")
  • 1-2 cans of minced clams including the juice
  • 1/4 pound of shrimp and/or chopped crab, lobster, or other shellfish
  • 3-4 strips of bacon, chopped
  • 1-2 potatoes, cubed 1/2"
  • 1-2 stalks of celery, chopped
  • 1 medium onion finely chopped
  • 3 cans of chicken broth
  • 1/3 cup of white wine or cream sherry
  • 1 Quart of heavy cream
  • 1 stick of butter
  • 2 dashes of worchestershire sauce
  • 1 dash of Tabasco or ceyanne pepper
  • 1/2-3/4 cup of flour
  • 1 dash of thyme
  • 1 dash of parsley
  • 1 dash of salt
  • 1 dash of pepper


Here is what to do:

  • Brown bacon in a your favorite soup making pot
  • Add butter
  • Saute onion, celery, clams and juice
  • Add wine and other seasonings
  • Add any shellfish and lightly saute
  • Add all other ingredients
  • Mix, stir, and heat


Serve hot.
