Wild Game Recipes: Snapping Turtle





Today I am presenting a recipe that I plan to make this coming season . . . provided I manage to find and capture the main ingredient-- snapping turtle.
I have had turtle soup twice in my life, and liked it. However, I have never had snapping turtle with the meat cubed.

I have caught many snapping turtles in my day, starting as far back as age eight. They are nasty buggers and potentially dangerous, especially to your digits (fingers). I will repeat that in RED: Snapping turtles are potentially dangerous.

My plan is to go to a spot were I caught one last season and actually bait for him. I am pinpointing this one for two reasons: 1) Size- I want a medium sized one (helmet sized) to avoid long term built up pollutants, and 2) Location-- I want a stream dweller to get a better taste (Lake and pond game always seems to have a more muddy taste-- my opinion).

Once I capture him I will be keeping it alive in an ice cooler with water for a few days to flush him out. Then I will bleed him and out and fillet him.

Here is the recipe I plan to use, it is a culmination of numerous recipes I have found and my own twists based on my tastes. I expect a ten minute prep time.

Here is what you need:

  • 1-2 pounds of turtle meat, cubed
  • 1 medium onion, diced
  • 1 clove of garlic, minced
  • 1-2 tablespoons of butter
  • 1 can of crushed tomatoes
  • 3-4 potatoes, cubed
  • 2 tablespoons of sherry
  • 1-2 dashes of worcestershire sauce
  • 1 dash salt
  • 1 dash pepper


Here is what to do:

  • Brown the meat with the butter in a pan for a few minutes
  • Mix in the balance of the ingredients and cover
  • Cook medium/low heat for 15 minutes and stir occasionally
  • Reduce to a simmer for 30 minutes


I think I will be serving this over egg noodles or wild and long grain rice . . .
