Cooking From Scratch: Pasta, Rice, and Potato Substitutes

Here is a quick one. Self reliant people need to be healthy-- many seek to reduce pasta, rice, and potato intake.
When trying to cut back, one needs substitutes. Mrs. DDFD and I LOVE pasta, rice, and potatoes, but we are trying to cut back on them a little.  I have had my eyes and ears open for alternatives or substitutes.  Here are some of the ideas I am coming across:

  • Load up on more veggies-- this will be quite easy with the upcoming garden season
  • Use more grains-- I am hearing this on Emeril Green (one of my favorite TV cooking shows) and I will be exploring it more in the future
  • Use beans-- this is typically a meat substitute, but can help fill the bulky food void

Lately, we have been eating more veggies mostly. I have a series of grilled veggie ideas we have used to help get you started.

Then again, there is always moderation . . .
