Cooking From Scratch: How to Make Your Own Universal Seafood Marinade and Seasoning

During our vacations to the seashore, we usually have plenty of seafood caught and some bought (mainly shellfish).
On the night of our fish fry, I handle the fillets.  Here is the "Universal" marinade and seasoning:

Here is what you need:

  • 1 stick of butter
  • 2 cloves of garlic
  • 1/4 cup of white wine or sherry
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 2 tablespoons of parsley, chopped (Fresh is best)

Here's what to do:

  • Melt butter
  • Mix ingredients
  • Put mix into foil bag with fillets and grill

Serves six or more.  Prep time is under a minute.
