Cooking With Alcohol





Here's a quick tip for the kitchen.
  When you are cooking, sometimes the recipe, like many of mine, calls for alcohol.  For best results follow this simple rule:

If you wouldn't drink it, don't cook with it.

What to have on hand?

  • Red wine
  • White wine
  • Sherry
  • Assorted liquors
  • Vodka
  • Amber beer


I don't use cooking wines.  I use real red or white wine that I would have a glass of while cooking.  Same thing with sherry-- it could go on the mushrooms or on the rocks . . . marinades should be made with the good stuff!

Making lobsters?  Don't pour the cheap beer in the boiling water-- use a full bodied beer. Penne vodka? Don't use the cheap stuff!

My view is that the alcohol adds to the flavor sweeter wines can really alter a dish-- make it a good one. If you are going to spend the time to cook-- cook quality and use good liquor.  Just save some for your glass . . .
