What to Do With Leftovers?





While I try to make precise portions (including seconds) for our family-- there are times we have leftovers (Sometimes, despite what I just said, I do cook with leftovers in mind) we find we have leftovers. The big question people ask is what to do with leftovers? Here are my thoughts:

  • Second meal of entries-- A day or two after later, the kids have no problem with a second meal of spaghetti and meatballs. The trick is to make sure the leftovers keep and reheat well. Stews, chili, soups do very well.
  • Convert to a side dish-- Sometimes the leftovers aren't enough for a second meal of entries, so I turn them into a side dish to another meal. Pasta and rice oriented leftovers are really good for dish.
  • Use as an ingredient-- Many times I will turn leftovers into an ingredient of another meal. Think shrimp or ham added into scrambled eggs the next morning. Use leftovers as soon as possible.
  • Compost them-- Yes, it sometimes happens that leftovers make their way to the back of the frig or freezer and get forgotten for too long. In our household, nothing is wasted-- compost stall leftovers to create fertile soil for next year's garden.


As you can see, leftovers present many opportunities for their use . . .
