Cooking From Scratch: How To Make Your Own Homemade Mayonnaise

Cooking from scratch-- there is no substitute. Many self reliant people have discovered that fact. Here is how to make your own homemade mayonnaise in about five minutes.
Here's what you need:
- 2 Egg yolks (Save the whites for something else)
- 1 cup of oil (olive, canola, or vegetable)
- 3-4 tablespoons of lemon juice or vinegar
- 1 dash of salt
- 1 dash of pepper
Here's what to do:
- Whisk it and add oil slowly
- Chill and serve
Inexpensive, quick, and easy . . . not to mention good!

How much mayonnaise does this recipe make? I am curious how it compares in price to store brought mayonnaise.

While I haven't done a hard core analysis of the cost, as you can see it is basic ingredients you probably have on hand. I would estimate under $0.35 for the cup or so of output. The only way I buy mayo is when it is on an ender in the supermarket as a loss leader. The biggest difference of course is the freshness and taste-- you can't beat homemade!
